Food ScienceCourse Description
This course will explore the world of our food supply. We will work from the seed, or birth, to your table. We will look at how our food is grown, harvested, processed, preserved, transported, and at your table. We will see how the government regulates and protects our food supply. Students will learn through several labs and activities the basic principles of food safety, food spoilage, and sensory evaluation with the appropriate technology of food preservation and processing. This class counts as a chemistry science credit towards graduation. Major Units - The Science of Food - Basic Chemistry - Organic Chemistry - Food Chemistry - Food Microbiology - Food Preservation and Packaging - Working with Complex Food Systems Course Project (Supervised Agricultural Experience) Students will be expected to develop a course project for each quarter of class. This project must be related to agriculture in some way and will be worked on by you the student almost entirely out of class. Best of all you may already be doing something that counts toward this project. This project will be worth 10% of your overall grade and you should expect to spend a minimum of at least 10 hours per quarter. |
